Illinois is about to get some really gourmet edibles

As medical marijuana legislation changes and states in America begin to start using the highly topical treatment, so does the way people consume the product. Innovation in the consumption of marijuana has been one of the key contributors to the $2.4 billion industry, and now James Beard Award-winning pastry chef Mindy Segal, owner of Mindy’s Hot Chocolate in Chicago, is working on a line of marijuana-infused foods.

Segal is teaming up with Illinois biggest cannabis cultivator, Cresco Labs, to produce a range of edibles for medical marijuana patients like brittle bars, infused granola bites, and “an infused chocolate drink that is intended to be warmed to enhance the soothing effects. The pastry chef will also create a cookie batter mix so step over Betty Crocker.

Mindy Segal plans to start selling the line by late February next year in licensed dispensaries across the state, then the items will be made available in five additional states. But Segal is hoping to take her line nationwide… only where medical marijuana is legal, of course.
